How deep are the glass shades? Do they sufficiently cover the bulbs?

Glass bottom Diameter is 13" Height is 5.125". Yes, the do cover the bulb.

I need to hang this fixture from a slopped ceiling. I would need about 5 feet of chain on the one side. Would the wire be long enough?

The Capital Lighting 3078 will not properly hang from a sloped ceiling and we carry capital lighting chain in the Rustic Iron finish.
