Yes, the Elco ELST48 can have contact with insulation.

can you install it in a shower wall?

The Elco ELST48 can not be installed on a shower wall. This is only UL Listed for Damp Locations not Wet Locations.

How much light will this provide? Can I install it inside a walk-in closet?

The Elco ELST48 has a 7W-9W bulb, which is enough to provide ambient lighting, but probably would not be enough light as the primary light source. Thank you for your question.
