Are there extension rods in order to use with a 12' ceiling?

What is the diameter of the canopy that attaches to the ceiling?

The Kichler 2771's canopy is 5 1/4" in diameter.

Can I use this over my kitchen sink if I have 8 foot ceilings, if I just use two of the 12" stems?

The Kichler 2771 Tuscan Single Light Mini Pendant will hang to just over five feet from the floor even if you only use two of the 12" rods. It would actually be below eye level with 8' ceilings! If you used just one of the 12" rods, it would hang at just over six feet from the floor.

Can this be installed on slope ceilings?

The Kichler 2771 can be mounted on a sloped ceiling.

Can I hang these pendants from a track?

The Kichler 2771 is not suited to hang on a track.

Can I use this light in a bathroom that does not get "steamy"? Another site said it needed a dry location.

Unfortunately they're correct, because Kichler only recommends this fixture to be installed in a dry location. If it were installed in a bathroom it would void the warranty on the fixture.

is there a ceiling plate included?

The Kichler 2771 does come with the ceiling plate.

What is "etched seedy" glass?

The "etched seedy" glass on the Kichler 2771 is more frosted with etche marks like seeds in them.

Can this be used with one 6" stem (over a kitchen sink)?

The Kichler 2771 can be used with one 6" down rod.
