Can I get a soap dispenser to match the vibrant stainless?

The Kohler K-560 would go well with the K-1895-C-VS, which offers an identical matching finish.

Does the spray head have a magnetic lock to keep it in place when retracted?

The Kohler K-560 does not have magnetic docking, and is held in place with a counter-weight.

How tall is the K 560...is it for a secondary sink or is it as tall as regular pull down goose neck sinks.

Is it possible to reverse mount it, so the lever is on the left and operates to the front?

The Kohler K-560 spout will have a 360 degree swivel. It can be installed with the lever on the left side.

The Kohler K-560 button is made from plastic.

We just received our new faucet and it came with a plate for the base of sink ( it was not pictured that way) . Can it be used with or without that base plate?

Yes, the Kohler K-560 can be used with or without the plate on the base.

What clearance is needed in the back to operate the handle?

The Kohler K-560 has a measurement of 4-1/8" from the center of the spout to the full extension of the handle, so you would need about that much clearance when measured out.

What is the difference between the K-560 and K-780?

There is not much difference between the two faucets. They are from different collections, so they have a different style, but that is all.

Does the faucet go back to the it's original flow after you use the spray option and shut the water off?

The Kohler K-560 will stay on the function you previously selected.

Does the spray remain locked after the button has been pushed and released, or do you have to keep holding the spray button down?

The Kohler K-560 spray does remain locked when you switch sprays.
