Does the set include door knobs for both sides of the door, face plate, and latch?

Yes, this will include the whole knobset. The knobs for both sides of the door, the face plates, aka rosettes, and the latch.

Can I get this with the knob on the outside and a lever on the inside?

The Kwikset 200CV is only available with a knob on the outside as well as the inside.

Are all 3 styles of latch plates (square mortise/round-cornere?d mortise and drive-in) included?

The Kwikset 200CV comes with the standard round corner latch plate. If you need a square corner latch plate, it is part Kwikset 83437.
