Would this or any of the other dummy levers be both appropriate and compatible on a bi-fold closet door?

The Kwikset 788PML-RH is a non function dummy handle, basically it operates as a door pull. In my opinion, this or any single sided dummy would work for your installation.

How is the dummy lever fastened to door?
