How many lumens does this light emit?

The Maxim MX 87200 is just over 1200 lumens, approximately as bright as a 75w incandescent.

Does the 2.5" go inside the ceiling?

The 2.5" is the height outside of the ceiling, but there does have to be a electrical box in the ceiling.

How do you attach this light to the ceiling? Do I need a separate part?

The Maxim MX 87200 will come with everything that you need to install it on your ceiling. There is a canopy that holds the bulb that the shade goes around.

Is this light suitable for a bathroom?

The Maxim MX 87200 would not be suitable for a bathroom because it has no UL rating.
