Does this control volume and temperature, and is it by rotating the valve or pushing in and out.

The Moen 3520 can control volume by pulling the stem out, then temperature by moving it from side to side.

what single handle shower trim goes with this specific roughin?

Many of the Moen single handle shower trims can work with the Moen 3520 rough-in. If you search Moentrol in the search box you can look through the options, and if you see anything you like, just look in the spec sheet to confirm it will work.

I don't know what style you are looking for, but the T3112 is a pretty simple shower trim that works with it.
